Ingredients
- 4 oz. spaghetti noodles
- 1 lb. package frozen stir fry veggies
- 1 egg
- 2 egg whites
- 8 oz. canned spaghetti sauce
- 1 cup shredded mozarella
- 2 cups shredded cooked chicken
- 1 tsp. chili seasoning
- 1 tbsp. Head Country seasoning
- 1 small can diced petite tomatoes
Directions
Cook chicken. Cook spaghetti according to the package and add veggies during the last four minutes of cooking. Drain when done. In another large bowl, wisk together eggs, sauce, seasonings and cheese, then heat until melted for a nice sauce. Coat a 10-inch non-stick skillet with cooking spray. Put 3/4 of the sauce in a cast iron skillet and mix with noodles, veggies, and chicken. Cook at medium for about 5 minutes until it sets up. Then reduce heat to medium-low and use the rest of the sauce to coat the top. Put in oven for about 10 minutes at 200 degrees.
